El Ladrón Yolo begins with over 6000 lbs of agave roasted in pits for 7 days with local partners. Meticulous processing and a 10-day fermentation follows before double distillation in a copper still. Finally, a 6-month rest in steel creates an exquisite smoky spirit with tropical fruit and spice notes.
